Curry Chicken with spinach and chickpeas. Josh found this recipe and I was a bit worried, but it was amazing! It was in his Men's Health magazine under 1 skillet meals. What could be better than a good meal that only took 1 pan to make?
Ingredients
1 sliced onion
1 tbsp curry powder
1 tbsp veg oil
2-3 chicken breasts cut into strips
1 cup plain yogurt
15 oz can chickpeas
2 cups spinach
1 box of couscous, flavor of your choice.
Step 1
Saute the onion and curry powder in oil until the onion begins to soften. 5-7 min
Step 2
Season the chicken with salt and pepper, nestle them in the pan with the onions and cook until just cooked through. About 2 min a side. Remove chicken and set aside.
Step 3
Stir in the yogurt and cook for 1 min more. (Do not boil) Return the chicken tot he pan. Add the spinach and chickpeas. Cook until the spinach is wilted and the chickpeas are warm. Serve over the couscous.
